Freshman 15...

...7 tips to avoid it

I posted earlier today about kids going back to school and what that means for families, moms in particular.  But I'm reminded also that some "kids" are off to college for the first time ever.

For Freshmen, this is a new way of life, away from the structure of home and family meals.  Thus, the dreaded Freshman 15 enters the picture. Often this added weight occurs not just in the first year of college, but in the first two years and is attributed to stress, increased alcohol consumption and poor eating habits.

You can avoid the Freshmen 15 by following the 7 tips to choose healthy foods:
  1. avoid eating when stressed, while studying, or while watching TV
  2. eat slowly
  3. eat at regular times and don't skip meals
  4. keep late-night snacking to a minimum
  5. watch the size of your portions and resist going back for additional servings
  6. steer clear of vending machines and fast food by keeping  healthy snacks like fruit and vegetables on hand in your room
  7. replace empty-calorie soft drinks with water or green tea
At the University of Florida, the Student Health Care Center offers Nutriton Services to currently enrolled students as no cost. Nutrition Services may address:

An ounce of prevention...

With Memorial Day coming up and knowing that many of you are very weight conscious especially at this time of year when the sun is out and you are beach, river or pool bound, I thought it was a great time to share this article from Dr. Ellan Duke.

Tips for a Healthy Holiday

Ahhhhhhh... a holiday. Time for some rest and relaxation. Time to unwind. Time to get away from it all, at least for a little while. Quality time with your significant other, family and/or friends. Time to pack on the pounds? Not necessarily!

Want to do it differently this year? Time away from your daily routine doesn't have to mean automatic weight gain. Too many of us justify poor eating choices and food/drink excesses with the all too common, "But I'm on holiday!"

There are many healthy options to choose from wherever you go - you just need to be mindful of them. Here are a few suggestions:

  • If there's a buffet, don't make a repeat trip. Fill your plate with fruits and vegetables and then add other choices. Beware those cream sauces - try to keep it light!

  • You're not in your childhood home... you don't have to eat everything to get some dessert. Eat slowly and remember that it takes 20 minutes for your brain to get the signal from your stomach that it's full. If you eat until you feel full, you've eaten too much.

  • Sipping umbrella drinks on the beach or by the pool is certainly tempting, but alcohol contains a lot of sugary calories. Beer and wine have lower calorie counts and are better choices, in moderation.

  • Why are desserts always so plentiful? Make them a special once-in-awhile treat, choose fruit, or split it with someone.

  • Find out if the hotel has an exercise room. Cruise ships tend to have fantastic exercise facilities. Be sure to pack some shoes to exercise in. Take long walks and take in the local scenery.

  • Don't be afraid to ask for menu substitutions. Substitute steamed veggies for french fries or mashed potatoes. Avoid fried foods the best you can.

  • Bring along some high-fiber snacks. Nuts, granola, and multi-grain crackers are good snack choices and they don't need to be kept cold.

  • Ask for low-calorie/low fat menu choices. Ask about local restaurants that feature healthy food choices.

  • Drink plenty of water (bottled, depending on where you go). Have it served with lemon or a "splash" of cranberry juice for some refreshing flavor.

  • Consider half-portions if they're available on the menu. If not, decide to eat only half of whatever is put before you and take the rest with you.
A new, relaxing environment can be a time when you try different foods and rest. But if you follow some of these suggestions, you can maintain your "before" weight and save yourself a "post-holiday" diet!

Sugar-Free Kids...

As parents, I think we all agree that we are responsible for the well-being of our children. Why is it that so often we neglect their nutritional needs? We are constantly giving them sugary drinks, candy, cookies and more and most of us probably don't think twice about it.

Several studies have found that milk (lactose is a sugar) and other beverages are the two main sources of sugar in children, while candy was the third highest contributor. Another study also showed significant, positive behavioral changes in children who had been diagnosed at ADHD when sugar was removed from their diets.

  • Sugar can contribute to hyperactivity, anxiety, depression, concentration difficulties, and crankiness in children.
  • Sugar can raise adrenaline levels in children.
  • Sugar can contribute to eczema in children.

Would You Like Sugar With That?

Although artificial sweeteners are declared safe for consumption, many people choose not to use them for themselves or their kids because of taste or other personal reasons. Here are some tips on how to reduce sugar intake without using artificial sweeteners.

Rule #1: Learn to like foods that are less sweet.

Replace one-fourth to one-third of the sugar called for in recipes with non-fat dry milk. Here’s how:

Cakes: For each cup of flour, use no more than ½ cup of sugar in cakes.

Cookies: Alter cake-like cookies the same way as above. Altering other noncakelike cookie recipes may result in an unacceptable baked product.

Muffins and quick breads: For each cup of flour, use no more than one tablespoon of sugar.

Yeast breads: For each cup of flour, use no more than one teaspoon of sugar.

Rule #2: Use spices and herbs.

Try using cinnamon, cardamom, or nutmeg to enrich the flavor of foods in place of, or with a reduced amount of sugar.

Rule #3: Add fresh fruit.

Mix fresh fruit into unflavored oatmeal in place of brown sugar, or mix fruit into plain yogurt instead of buying the yogurt with all the cookie and candy toppings. In place of maple syrup, make your own toppings for pancakes and waffles by puréeing fresh fruit and adding a bit of water and vanilla extract.

Rule #4: Sweeten foods with juice.

Use fruit juice or frozen juice concentrate to sweeten foods.

Rule #5: Consider using honey or molasses.

Honey and molasses taste sweeter than table sugar. Using them instead of sugar may help you reduce the total sugar content of a recipe, but by weight, they contain as much sugar (carbohydrate) as table sugar.

Rule #6: Serve cooked fruits and vegetables.

Cooking fruits and vegetables can make them taste sweeter than eating them raw.

Rule #7: Make your own beverages.

Make your own reduced-sugar beverages by mixing together carbonated water and fresh fruit juice.

Rule #8: Make sure your kids get plenty of rest.

Chronic lack of sleep can cause people to crave more sugary foods. Make sure to get plenty of rest whenever you are trying to reduce the amount of sugary foods in your diet.

Rule #9: Make sure your kids don’t go four hours or more in between meals/snacks.

Younger children and toddlers should have regular snack times throughout the day, and older children should be allowed to have sensible snacks in between meals. Keeping your kids on a schedule helps prevent hypoglycemia, or low blood sugar, from occurring. Toddlers and preschoolers may need to have something to eat every two hours to prevent the “hungry tantrums.” By providing a healthy snack schedule, you can help prevent your child from craving sugary foods.

Rule #10: Use fruit for dessert.

Try using the best fruits of the season as an after-dinner dessert! Cut up fresh strawberries, bananas, or melon for toppings on frozen yogurt or applesauce. Or mix blueberries, raspberries and strawberries together with a little “light” whipped cream for dessert. If fresh fruit is not available, try frozen fruit as a topping over fat-free vanilla yogurt, Greek-style yogurt, or yogurt of your choice. Mix frozen fruit with soy milk in the blender for a homemade smoothie...great for an after dinner treat in the summer!
